The new hop plants are in the ground. I picked Hallertau Blanc for some winey, passionfruity aroma and Callista for a lot of Mango and stone fruit. The wizard of the plants said, I might even expect some cones next year because the plants now have a lot of time to grow roots before the spring 😍

The offshoots we planted in may escalated spectacularly. I would probably get enough cones for a small batch of beer. Which is really not bad for their first year. I'm really happy with the Cascade plants which have been a bit anemic in their old place. They really seem to like this new spot.

Digging through a layer of compressed clay is definitely my least favorite part of the hobby.
But I assume that at some point in the future I will hold a pint of bitter-fruity homebrew Pils, sniff the tropical aroma of the Callista hops and mumble "worth it" to myself 😏
The Callista and Hallertau Blanc plants should be on the way some time next week. I plan to plant them next weekend.

The hop harvest is in and I completely forgot to take pictures... 😅
BUT
The wizard of the plants says that if I want more hop varieties planted, I should do that before the winter, so I'll probably spend the next few days pondering which two hops I'll pick from Ariana, Callista and Hallertau Blanc. 🤔

I mashed in at 64°C and now I am doing my usual Hochkurz mash (63°C for 30 minutes, 70°C for 30 minutes, 78°C for 15 minutes).
Yes, I'm brewing on the old BIAB setup today. The Braumeister cannot handle big and honking malt bills.
Color of mash and foam look very promising.
Oh and brewing thermometers SUCK.

When I woke up this morning, I did not really feel like brewing a big chocolaty winter warmer. But now that I smell the chocolaty notes in the malt I am super psyched about this beer 😍

The first thing I learned about strong beers is TO GO EASY WITH THE SPECIALTY MALTS!
Consequently, the grain bill consists of a base of 50% Munich Malt and 39% Pilsner Malt for some bready richness but nothing too cloying. I add to that 4% of Carafa Special 2 and 2% of Caraaroma. They will hopefully give me some nice chocolatyness. The final five percent will be table sugar. I took that trick from my Belgian beers and the "Modern Lager Brewing book" and it should keep this 8%er drinkable.

I fell in love with this style in Poland and brewed a small batch a couple of years ago. It was terrible. Cloyingly sweet and just yuck.
Last year I had another one in the Icelandish winter and I wanted to have one of these smooth, warming, chocolaty winter warmers for the family christmas dinner.
I learned a thing or two since my first attempt, so I'm hoping that this batch is actually drinkable...

Allrighty, it's 35°C outside, time to brew a big and honking Baltic Porter for Christmas! 😅

I admit it: I do not have the first clue how plants work. So I was pretty amazed how easy it is to create hop scions. My father-in-law just cut a bunch of vines off at the right spot, we put them in bottles with water, placed them in the abandoned henhouse for just enough sunlight and now we wait for them to get new roots. Super easy.
Also yay for more Cascade- and Hüll-Melon-hopped pale beers in the future 🥳 🍻

We checked on the hops today. I love how the Hüll Melon is all "Yeah, that's a cute pole but I'll just send five vines up this wall on my own" 😆
We'll create some Cascade scions tomorrow. That should be fun 🙂
