side note, different cheese cloth (muslin, etc etc, even coffee filters work) has different.. holes? (not sure the technical term), make sure the whey is draining as clear/yellow (it's almost like a syrup consistency) not milky, if it's milky that means yogurt is draining with it and you don't want that.
