Does it give you a crash log?

It's just a Debian VM. So to install ollama models you'd need to use installation instructions that apply to Debian.

Have you tried doing it via the Terminal app available via developer options instead?

Hi vonblubba, I'm a GrapeheneOS community memeber. I translated your Mastodon post to English. I'm going to reply in English myself, hoping you understand it, because I can't verify the quality of the translation to Italian.
There is a crowd-sourced, non-exhaustive list of banking apps. It has reports about their compatability. If your bank is not in the list, that doesn't mean that it doesn't work. It means there is not yet a report in the crowd-sourced list. For Italy, see : https://privsec.dev/posts/android/banking-applications-compatibility-with-grapheneos/#italy
Android Auto works on GrapheneOS. It's opt-in. You have to install Google Play, which is sandboxed like a regular app, and you have to install Android Auto. For Android Auto certain functionality is also opt-in, so you can choose what you will and will not allow. See for more information this webpage section: https://grapheneos.org/usage#android-auto

What are you referring to? Are you referring to developer identification for sideloading? Or are you referring to various types of digital IDs and age verification mechanisms that some governments are implementing or proposing?

I myself use GrapheneOS. It's an open source OS based on the Android Open Source Project. It focuses on privacy and security while aiming to also achieve the usability level of mainstream OSes like PixelOS. In contrast to many other Android-based open source projects, GrapheneOS is a highly technical project focused on substance. It doesn't mismarket itself and doesn't focus on gimmicks or features that are easily circumvented. The basis is rigorous security research and engineering.
I've seen some people recommend non-Android based Linux OSes in the thread (postmarket, sailfish ...). Note that those OSes, which try to use the traditional desktop Linux technology stacks, are a drastic step backwards for security and privacy compared to modern mobile OSes like Android and iOS. Those technology stacks heavily use memory-unsafe programming languages (which often contribute to security vulnerabilities) and don't have a sane security model with a mandatory app sandbox and accompanying permission control.

If your bank doesn't have its own tap-to-pay solutions (uncommon in North America), you might want to look into smartwatches. For example, there are some Garmin watches that support Garmin Pay and they still have watches without microphone, in case you want to avoid that.

It's not that bad, not that many apps implement it. If there are certain apps you are worried about, you can mention them I can try to check for you or you can just join the community rooms and ask there in the third-party apps channel: https://grapheneos.org/contact
That can help you get an overview before you install GrapheneOS.
