True, you're right on the "all models are wrong". But the second part of that aphorism, "but some are useful", also holds as models/ideologies can provide a useful abstraction to allow reasoning without cognitive overload. But, yeah, don't get too comfy in that bed which inevitably will stretch you out the wrong way.

It's a realistic perspective but a bit cynical, no?
Correct me if I'm wrong, but it seems like your wishful thinking was to aspire that the common man would care about all the principles that bitcoin engenders and then adoption would follow that way. So a mass bottom-up shift. But is that path necessary?
E2E encryption was one of the ultimate cypherpunks goals and, finally after 30 years, it's widely available. Are there issues with the implementation for most users? Sure, and most people don't care (until they do). But it's there for most people and gives them more freedom and privacy than if it hadn't come about.
I don't see the incentives as so different for bitcoin so I'm not ready to write it off. It is disheartening to see glacial adoption though.

So I don't get the desire to merge chat and payment apps. Maybe because I'm a Unix graybeard but I want each app to do basically one thing and do it well. We've had URI schemes (e.g. mailto) for ages and they work fine. Just make your app aware of bitcoin payment schemes (see BIP 321).

Not a very original take but quite remarkable how OpenSSL managed to create such poor APIs that the blast zone spread so wide.
