(Old) foodie with an array of expensive pots and pans here; read the quoted blog and get you some carbon steel or whatever the Made In or restaurant stuff is. I’ve been building some hexclad (not bc of Gordon Ramsey) to move toward mostly induction one day (I have a big gas range + an induction burner atm) and while it’s performing well so far I am not convinced of long-term resilience. Cast iron too heavy for me day in day out.
