Canning was invented by a French chef trying to fulfill an instruction from Napoleon to figure out a way to preserve traveling food. The history of Vienna sausages (yes, the horrible little things in the pop top can) can be traced directly back to Napoleon basically asking for the canning retort to be invented so he could carry food with his army instead of foraging as they went.
There are dishes we consider delicacies today, such as Duck Confit and Pork Rillons, that were originally developed as meat preservation methods by the French.
Preserving pork sausage in canning jars under pork fat eventually became a staple of Depression-era rural American cooks (it's gross unless you are hangry).
