this was also (accidentally) a demonstration of the p2p nature of calls in #XMPP. We had a video call running when killing the server, thinking that we could show it freezing up, but the call continued running!
Next time we should have two unpluggings: one where people see they can no longer send texts when the cable is pulled out, and then again with an ongoing video call to see that it is no longer dependent on the XMPP server once the connection is established
