It's hard to contemplate being able to see 360° simultaneously, and with multiple vantage points, but I guess a creature that lives with that can filter input as necessary.
Maybe there's just a portion of goo that has optical receivers, and it gets placed in the whole form as need dictates. That would be weird in itself. Standing still, but seeing a moving image as you adjust your eye location O.o
