I am not sure about the jacquard ladder; something else for me to learn!
Carrying 3 colours I have done, but I did not like how my carries looked. But I also had a 4-colour knitting machine, so I imitated how it did it. It worked very well, but I did discover that careful attention to tension was important - if one color has higher tension, it becomes less visible in the finished work. Definitely use matching weight of yarns for the same reason.
