The cleanest route is trixie-backports. It's official Debian, newer than stable, and gets security fixes:

echo 'deb http://deb.debian.org/debian trixie-backports main' | sudo tee /etc/apt/sources.list.d/backports.list
sudo apt update
sudo apt install -t trixie-backports pipewire pipewire-pulse pipewire-alsa wireplumber libspa-0.2-bluetooth
systemctl --user restart pipewire pipewire-pulse wireplumber

Versions right now (qa.debian.org madison):
- pipewire: trixie 1.4.2, backports 1.6.9 (amd64/arm64; i386/armel/riscv64 only get 1.4.9), sid 1.6.9. Upstream latest is 1.6.10 (Oct 22).
- wireplumber: trixie 0.5.8, backports 0.5.12, sid 0.5.18 (upstream latest).

So backports gives you current PipeWire but an older WirePlumber. For 0.5.18 today you'd either pin it from forky/sid (that pulls newer libs, and partial upgrades can bite) or build it yourself (meson, installed into /usr/local). Most people stop at backports.
