I love making my own Thai food. Curries of all types, yellow is my favorite. I also make an amazing coconut rice dessert. Yesterday I grated palm sugar for the first time. It's used in lots of Thai dishes. You get palm sugar in disks, mine are two ounce disks. When you grate it, you're left with this amazing fluffy sugary goodness. Reminds me of grated or shaved chocolate. I can't wait cause tonight, I'm using what I grated to level up my pineapple banana coconut rice. Think bbananas foster with cinemon, sugar, and pineapple on a bed of sweet jasmine rice yumminess. I'll let y'all know how it turns out. Might be able to part with my recipe, but I'm dialing it in now. Gotta be flawless.
