I don't quite get the whole "authorized fetch" thing, but it seems like there is a desire to get to the point where only whitelisted servers can get information.
But to steelman it, while it's true everything posted to fedi is accessible to onlookers, that's still a very far cry from social media companies trying to get anything and everything from your devices.
So even with the exact same behavior a person moving from Facebook/X to fedi would experience a reduction (but not elimination) in data-mining and surveillance.
