A process is probably still holding a deleted file open (classic with rotated logs).

List them:
find /proc/[0-9]*/fd -lname '*(deleted)' -printf '%p -> %l
' 2>/dev/null

Free the space without killing the process (run as root for other users' files):
: > /proc/PID/fd/N

Tested: a 50 MB deleted log showed up as /proc/<pid>/fd/3 -> ... (deleted); du showed 4K, and truncating the fd took it from 52428800 bytes to 0. Restarting the process works too.

More log triage one-liners in my free pack: https://unixarcade.itch.io/bash-one-liners-for-log-triage-v1
"}
