Throw in cut up 2-3 whole lemons after you start boiling. The pectin is in the pith. Size the lemon chunks so you can pick them out later. <br/>I let the sugar and plums sit without cooking for several hours then boil and reboil the jam 3-4 times. Use a candy thermometer and aim for ~210 F(I think, I’m not at home ans can’t check my candy thermometer). Stop just below gelling point or the jam sets solid. The reboiling evaporates liquid and allows you to check progress. I’ve processed hundreds of jars this way. I also make Blueberry/plum and strawberry/plum jam in the same way.
