The Glacier hops I'm growing are getting quite tall now. This one has reached the roof which is about 25 feet / 7.6 meters and it still wants to go higher. In past years I had lines going up to the peak of my roof which is probably another ~8 feet / 2.5 meters higher and they would get up to it.

#hops #gardening #HomeBrewing

I'm open to suggestions.

Here's the recipe: https://share.brewfather.app/AWn4GZxJwwiCax

Info about Calypso hops: https://hopsteiner.us/variety-data-sheets/Calypso/

#HomeBrewing #WestCoastPils #CalypsoHops

And I had wanted to do a yeast capture in the forest nearby where there used to be a brewery in the 1880s. So I collected leaf litter from where I think the brewery might have been based on old maps and intuition.

You can read about it here: https://mutedog.beer/capturing-wild-yeast-from-leaf-litter/

Whether the yeast I got has any real relationship to that old brewery I kinda doubt it but it did make some decent beer.

This knowledge has brought a lot of peace of mind when letting my wine just ferment with whatever yeast is on the grapes, etc.

Time for some wild yeast saison! This was fermented with my wild culture originally captured from my neighbor's honey about 12 years ago. The method is to hopefully get something that will ferment maltose via this method, and monitor it along the way. As long as it smells ok and doesn't grow mold then I will step the starters up to a larger size and if they smell ok, I'll give it a taste. If it tastes decent then I'll use the yeast in a beer of a few gallons at least to see how it goes.

Made some wild yeast starters to see if I can capture any wild yeast from some flowers I picked during my trip.

I was pretty stoked to find some random hops growing among the tall grass on the side of the path at kinderdijk so I grabbed a few.

I also snagged a few big red clover flowers at the Norwegian Heritage Museum in Oslo, near the stavechurch.

I also saw a ton of wild growing mugwort and yarrow all over the place in Scandinavia and The Netherlands.

#wildyeast #yeast #fermentation

I've been out picking wild (invasive) blackberries the past few days. Every year I pick around 40 lbs / 18kg to produce around 6 gallons / 22L of wine.

The wine itself takes 4-6 years to really get good as I leave it dry, but I'm thinking I may start backsweetening it to just an off dry level to shorten that timeline and make the drinking experience a little more enjoyable. Though when it turns out well it's awesome, but some vintages have been especially tart even after 7-8 years...
