Used two smoked ham hocks, the small amount of meat on which was shredded and added back to the beans once cooked. Bones/tendons/skin was discarded.<br/><br/>Eating now with fresh diced onions and crispy bacon bits (the fat from which was used to brown the onions and garlic that went in before cooking the beans) as a topping, and jalapeño cheddar cornbread. Packed with protein and fiber. I’ve worked with many people like this over the years that have definitely gotten “farther” (by some measures) than I have by hopping around in a cycle of overselling, sounding like an expert, delegating most things, getting in over their head once they have to account for the delta between knowledge and self-promotion, and then jumping ship for another company, getting a nice raise as they do so.<br/><br/>Then there are the people who just like to keep their head down and get their work done. The people who feel slimy trying to “sell themselves” and who feel like a huckster at “networking events.” I consider myself in this group, and most of my favorite coworkers are the same. We don’t generally do really showy things, our raises tend to be competitive but not nearly as much as jumping ship for a higher salary, and people generally come to us for advice before going to the big talkers who they’ve found out through experience aren’t much help. We care greatly about our work, but could care less about company politics that don’t affect us directly. We will never move as far “up the ladder” as the first group, and most of us are okay with that because we don’t want the feeling of dealing with the “rat race.” I’m lucky enough to work for a manager (that I followed from my last company after he switched) that is the same - so we get along great and can commiserate about the big-talker-do-nothings in the office.<br/><br/>There is a third group of people who are rare, but I’ve worked with - people who blend both groups who are good at selling themselves, confident, can be comfortable in any crowd almost instantly, and who have the competence and expertise to match. I also like working for people like this because they generally do a good job of selling not only themselves but their team as a whole. But in my experience this group is much harder to find. Sort of an office…not “unicorn,” because they do exist, but it’s like finding a four-leafed clover.<br/><br/>Of course there’s also the people that skate by just enough to not get fired…everyone tries not to depend on them for anything, and often ends up absorbing some of their work because it’s much more effort walking them through how to do basic tasks again and again that they never seem to retain. Everywhere I’ve worked has this group, the difference is at the best places I’ve worked this group is very small, and at the worst places I’ve worked the group is the majority, with a handful of people from the first 3 groups picking up all the slack.<br/><br/>I have been temped at various points to try to make a living doing something creative, but I watched my father - who is a tremendously talented woodworker - leave Corporate America to start a furniture business, slowly burn himself out over 5-6 years, deal with no/fewer health and retirement benefits, get frustrated by a public that constantly wanted custom work at IKEA prices and made unreasonable demands, and ultimately be incredibly grateful to make it *back* to a major Corporation. That somewhat cured that “itch” for me and makes me have the perspective I do now…which is do a good job at work, but don’t live for it…work to live and fuel your hobbies. I have tremendous respect for you and people like you that have the drive and passion to make creative things their living. But I don’t think it will ever be something I can do. The divide in the US currently largely follows rural vs urban - which is interesting considering the urban centers are the tax base that fund all the things the rural areas need. This is a broad generalization of course, there are rural folks who lean left and people in cities who lean right.<br/><br/>The current administration is focusing its terror on the areas that did not vote for it, and in my opinion it’s largely performative. Not to say that the results aren’t horrendous - they absolutely are - but I think it’s being done for theatre as opposed to policy objectives. It’s telling that the Rapist in Chief touts trying to “liberate” a state that voted for him 3 times…when it did the opposite.<br/><br/>That’s not meant to minimize any of this however - even at the most possible Pollyanna view of this we are experiencing at the very least a constitutional crisis. And it will get worse before it gets better, I’m afraid. And there will be suffering and death, which while always abhorrent is especially so because it is needless.<br/><br/>In short, I don’t think the gravity is overstated…I think the parallel is inaccurate. The geography doesn’t support a civil war (it supports general unrest I suppose, which isn’t really any better). But we have a few things going for us - the admin is growing more unpopular by the day. The urban areas it despises generate the vast majority of our GDP. The most violent and brazenly fascist parts of the admin - the immigration “enforcement” - are even becoming unpopular in part of the right wing base right now. We have a period of chaos and violence ahead of us, but it’s also an opportunity to create a new progressive era after this, which also gives me hope. That along with the number of average Minnesotans continuing to protest. And the number of people in my own state who are protesting. And the number of people who have never protested before that are protesting. Took a few pictures of some in the daytime. We didn&#39;t go to any on this particular street, but we did go to a few near the hotel, and we also did the tour at the Johnnie Walker place - I recommend it, even if you don&#39;t care for whisky (nobody&#39;s perfect).
