You can even use the Frozen Pre Breaded stuff, great for an air fryer.

Tartar Sauce

Mayo
Dill Pickle Relish
Finely Diced Onion
Mix and refrigerate for several hours at least, overnight even better. Will hold for a couple of weeks in the fridge, easy.

People have a desire to put lemon juice in this, but Ive found that it just makes it too liquified. Traditionally this red color comes from fermented red bean curds/paste...you can also use beet juice or even ketchup. But you dont really need any of that stuff...your BBQ sauce will just be brown instead of red...still taste the same.

If you dont have Shouxing wine, you can sub a Red or White Wine, or Rice Wine or White Wine Vinegar.

The sweeteners are also fungible, dont have molasses, use brown sugar. One thing to keep in mind is that you want the mop sauce to have some thickness to stick to the pork shoulder cutlets when brush basting them during cooking. So honey is almost mandatory (although you could use maltose).

quoting
nevent1q…39k3
I made some Char Siu marinade/mop sauce.

Hoisin Sauce
Oyster Sauce
Soy Sauce
Demerera Sugar
Molasses
Sourwood Honey
Shouxing Wine
Minced Garlic
Chinese 5 Spice
Course Grind Black Pepper
Dash of Cayenne
Splash of Red Food Coloring

2026-08-13T03:44:04Z https://nostr.now/nevent1qqsph9qxc2k2kgcle3v4g3r0xrzwnlpd9vu04mrjwxxkw3ag8xgg05czyrc0l4wc6tpegp4qrlq5r6tcw0sg69t050nxgdhsm3amwwxt4nytqns2u4s I made some Char Siu marinade/mop sauce.

Hoisin Sauce
Oyster Sauce
Soy Sauce
Demerera Sugar
Molasses
Sourwood Honey
Shouxing Wine
Minced Garlic
Chinese 5 Spice
Course Grind Black Pepper
Dash of Cayenne
Splash of Red Food Coloring

2026-08-13T03:33:41Z https://nostr.now/nevent1qqsgcuer0zt5x58g63vvlmqjqffep0c9zj9hp7acnw07fjttmzdhfcczyrc0l4wc6tpegp4qrlq5r6tcw0sg69t050nxgdhsm3amwwxt4nytqpgw0qw I might actually watch a WNBA game if I get to watch old retired NBA players absolutely destroy those whiny bitches. 2026-08-11T02:15:42Z https://nostr.now/nevent1qqsqanw2d3zhjfgcjg66ccm9cdmgzp3nxmupk0v98fngg8dufhfmnaqzyrc0l4wc6tpegp4qrlq5r6tcw0sg69t050nxgdhsm3amwwxt4nytqe67q9k Cassiopeia (the lazy W in the Northern sky) over Dump-truck (nprofile…f9jk) 's campsite on a hot August night.

2026-08-11T01:36:36Z https://nostr.now/nevent1qqsdh87dr9qywgrfqtgcj3250v5u79kamu0tpz7s0dva5dr8aadx69czyrc0l4wc6tpegp4qrlq5r6tcw0sg69t050nxgdhsm3amwwxt4nytq77mdka Is this color orange or red?

2026-08-08T11:15:51Z https://nostr.now/nevent1qqsxwnl7s9v822paa0rgqg8v3057wy4kxye0zz24yzp5q3wr2kezn6qzyrc0l4wc6tpegp4qrlq5r6tcw0sg69t050nxgdhsm3amwwxt4nytqcwlkd4 Top 4 Backpacking Tent Stakes (All Sizes)

MSR Groundhog
DAC J Stakes
Big Agnes Dirt Dagger
Easton Hollow Tube Nail Peg (also Big Sky International) 2026-08-08T09:29:16Z https://nostr.now/nevent1qqsw0smkm3xe2v42h5n9tkwmscyqu692n38mqy9534pxx0s8rupadtszyrc0l4wc6tpegp4qrlq5r6tcw0sg69t050nxgdhsm3amwwxt4nytq3gz0yz Found footage of thefinn (nprofile…qcxn) in the early 90s

https://youtu.be/KYWY2jyEQh4 2026-08-08T03:23:51Z https://nostr.now/nevent1qqstdf0v7d5h42nclfykt0mje6v3hpk79nx0uxffe37hg2l6z4zwjlczyrc0l4wc6tpegp4qrlq5r6tcw0sg69t050nxgdhsm3amwwxt4nytqdvr2gn Professor Milli Vanilli at Cambridge University

2026-08-07T18:50:32Z https://nostr.now/nevent1qqsyl5svhe9ycgjexl4jpl0mkgth9rz6aek9zjkutfalupghq29aksczyrc0l4wc6tpegp4qrlq5r6tcw0sg69t050nxgdhsm3amwwxt4nytqwkc8u9

2026-08-05T01:41:17Z https://nostr.now/nevent1qqszgyjpjy3k7vdncknny0dprt452z9dw0dzwyyjd80xpkse9lffuvgzyrc0l4wc6tpegp4qrlq5r6tcw0sg69t050nxgdhsm3amwwxt4nytq86f4cr The famous Charleston Sideways Single House

This style is found all over Charleston peninsula.
