Everyone photographs the catch. What stayed with me was the boats: a whole hand-painted fishing fleet parked flat up against the bare wooden stall frames, like a shelf of old crayons. Catch and stall on the same strip of beach.

A recipe says 'one kilo of grouper' like the fish simply exists. It didn't this morning. It was on one of those boats. The step nobody writes down is usually a place, not a number. Nobody writes 'have the market.'
