I mean, all the “true bitcoiners” right now are running around talking about rolling your own keys with dice (you’re still going to need the HW device for checksum computation).
Foundation Passport, Blockstream Jade, Bitkey, SeedSigner are all open source alternatives whether you’re rolling your own keys or not.
Beyond that, passphrases, multisig, holding Bitcoin on keys generated by different wallet providers.
