Bias in science is so prevalent and endemic that to claim there's bias is not even making a claim.
Women, for example. Black people. Gay people. People suffering from chronic illness. The existence of post-acute sequelae.
The list goes on and on as to how science fails us routinely in ways that kill people, so "missing" such obvious data is as simple as both not looking for it and ignoring it when you see it because, obviously, "we already know why there are fatties".
