I'm supposed to be studying for a test, so naturally, I'm doing anything but. This morning's project : inventing a version of coffee that has a higher pH.
Current thinking (all welcome to use or iterate on this idea) : roasted chicory + matcha + a bit of some kind of plant milk (which I normally hate, but it gives a boost to the pH). This way, you get a complex (hopefully "dark") flavor and caffeine.
The acidity of coffee causes oral hygiene problems : softened enamel and bacteria and yeasts like acidity right in coffee's range. Ever had a white tongue? That's most likely yeast, and you're almost certainly a coffee drinker. This is solvable.
