Huh... before you strip out snap all together, you can try:
killall snap-store
-or-
kill -9 3377 (or whatever the PID is in the latest error you got)
To force close out any and all snap-store instances.
Then try 'sudo snap refresh snap-store'
to specifically update just the snapstore.
