That NT1 is very sizzly in my cheap ear-buds. Possibly getting closer to the mic? What sort of room are you recording in? Curtains, rugs on the floor, etc will all help to warm up the sound.
For processing, I am a huge fan of Reaper. The eq options, and other built in plugins give a lot of control. My NT3's used to sizzle at around 9-10kHz. I've not used Fairlight a lot, but when I did, I felt it (or I!) lacked focus on really getting sound right. DR trying to be all things...
