My understanding is that Android itself is not embedded in Google, especially if you don't sign in with Google. It's an open source OS. The key is to not use it with a Google account.

In that case, you'd need to download another Android app store (I use Aptoide) so you can get apps independently of Google's Play Store.

You can then be Google-less on an Android device, as far as I can tell.
