The F/OSS project I would build if I had a load of spare time:
A federated taxi dispatcher system, which local taxi-licensing authorities could use to automatically onboard all drivers and which could be run as a driver-owned cooperative with a simple deployment model. A client app would connect to the server for whichever licensing jurisdiction you find yourself in and let you book taxis directly with them.
If I ran a union that represented taxi drivers, building such a thing would be one of my top priorities.
