My understanding of "AI escapes containment" stories is that AI use statistical data about past sequences to predict what should appear next in the sequence, and if you give them a prompt that points them down a sequence toward doing X, there's a good chance they'll do X, even if you've tried to steer them away from X, because following the probabilities provided by their training is the closest they can get to deciding anything.
They're escaping the same way a boulder escapes a ballista.
