Today's meatball recipe is:
211g grated onion
66 light breadcrumbs
25g fish sauce
44g smoked lardo
1064g beef mince
518g pork mince
0.50 tsp bay leaf powder
1 tbsp oregano powder
1 tsp roughly crushed fennel seed
2 tbsp maldon sea salt
2 eggs (110g)
1.5 tsp ground black pepper
1 tsp our own chilli flakes
28g fine chopped garlic
Not trying to be too punchy in any one direction with this... it could have done with a tiny bit less salt (but is no more salty than a normal butcher sausage) and I could probably have doubled the fennel.
