I think I have similar frustrations to yours . I remember many years ago when I heard some traditional Chinese music for the first time, and hearing that in comparison to the European-derived music I was used to made plain to me how much of what we think of as "the way music works" is historically or culturally contingent. It seems to me that music theory arises from three things, math/physics, intrinsic human psychoacoustic perceptual characteristics, and cultural conventions. But most of the discussion of music theory doesn't seem to distinguish which is which, and I find that rather confusing.

I suspect that if I spent more time reading music threads by I might be able to resolve some of that confusion, though.
