i've seen some impressive work done using locally refined clay earth bricks or tiles making catalan/timbrel vault roofs which can apparently are easily strong enough to build another storey on top of despite how thin they are, and their curve can be fairly shallow too. rohtak dome roof from India is similar.
however in my area earthquakes are a concern, so i wonder how plain masonry needs to be reinforced
