I don't see why not.
(As for the background, Germany has a relatively large Vietnamese community (and not much of a Japanese one). And since Sushi is fairly popular/well-known a lot of Vietnamese places also offer it. A lot of the just sushi or "Asia food" places are also Vietnamese run.)
