I discovered one of my favorite food preservation methods on YT a few years ago, while looking for something else. Vegetable powders. It takes what might have been food waste for the compost pile and turns it into complete shelf stable usable product. Celery leaves, tomato skins, onion and garlic peels, carrots shavings. Put them through a dehydrator and then through a cheap coffee or spice grinder and you have vegetable powders for future use in pastes, seasonings, salt blends, soup bases, and emergency food storage. Celery powder can be used to cure meats because of its high nitrate content. I haven't bought tomato paste or onion powder since I started doing this. Besides drying, which is passive, it only takes minutes and the resulting product stays good for years. I keep my powders separated and blend them as needed.
