I love this story. Beth's has been a thing in Seattle for generations and is one of the places from my younger days that's still around. I'm so happy for the new owner and the move back to 24/7 hours! May their tribe increase!
One of my favorite memories was a group of friends and one guy's bet that he could finish the 12-egg omelette in one sitting including the hash browns. (He couldn't do it.)
I love the owner's idea of one day opening up a museum or display of their best or famous artwork from past years.
I also love this part about the patina on the flat-top grill: "Reed gave the place a fresh coat of paint and some necessary upgrades, adding some vegan options to the menu. But the rest he kept, down to the flavors baked into the cafe’s flat-top grill."
