I suspect it's at least three things:
1) When everyone works for a rich noble or estate landlord, there's a lot less efficiency and a lot more beauty/tradition. Efficiency tends to be ugly, at least when you're not looking at a graph. A good example is fruit trees pruned for beauty vs. production.
