FWIW, I know Bob's Red Mill makes a GF flour that's supposed to be a 1:1 substitute for regular wheat flour. I've been to their mill, and they are scrupulous about their GF stuff. They have an entire GF area of their mill that has dedicated GF equipment and is completely separated from any area that handles wheat, rye, or barley.
