Good question! I haven't settled on anything particular yet.
In my Windoze days, I used a batch file along with RoboCopy.exe. It has some command line switches to "mirror" one folder to another and only overwrite source files on your PC/source that are newer than what's on your backup device/target. That helps reduce the backup time a lot.
