This week has been a bit of a shitshow for me so I haven't used up the veggies I bought last week. I combined four smallish zucchini, a large red onion, and a pack of white mushrooms with the other concepts in this recipe to make some roasted veggies. This is roughly half of my pile. The other half is in the air fryer at the moment.

I made my roommate jealous.
