At least some of them are linked to the modified car scene, so they know what is and isn't present in each variant of vehicle.
What often does get them nicked is carrying around their personal phone with the burner phone (as the burner phone can't do selfies, Facebook etc) and the two IMEIs being matched up in the same place by stingrays (or their LTE equivalents)
