Sorry for the late reply - I missed your question for some reason.
Jellyfin is a streaming server, isn't it? Then its files should probably be in /srv.
For comparison - the git and subversion repositories on my server are under /srv. There is a user git that owns the repositories and whose home directory is /home/git.
