July 25, 2026 gardening report. The first three eggplants are harvested. This is our second year growing the Ethiopian eggplant variety. The variety has a long productive season as the plant grows to the size of one of your small friends. The 2025 harvest Ethiopian eggplant Kasundi is wonderful. These fruits are firm and hold their form in cooking and preservation. #minnesota, #fermentation, #kasundi, #gardening, #ethiopian, #growyourown, #Zone4b
