Out of curiosity:
On a work computer with Outlook. After 10 minutes or so, I gave up. I had to Google it:
Open email - File - Info - Properties.
On a home computer (macOS - Mail.app).
It took me about 3 minutes to figure out: View - Message - All Headers.
Yes, Microsoft is not making it easy.
