Induction cooking has so many advantages, surprised that restaurants switching to induction is news. Much cleaner air, faster cleaning, less waste heat, less need for air conditioning, lower running costs. To which I'd add: geopolitical independence, since all you need is solar panels or windmills, plus batteries, to power a kitchen locally. No need to haul fossil fuels from petrostates half the world away just to cook.
