Because lots of things wouldn't make sense any more.
Noon wouldn't be at 12 any more in places that didn't already use UTC.
It would become difficult for people to explain at what time a day something happened if they live in a place that formerly used a different time zone. For some people 8 AM would be midnight, for others it would be noon, things like that.
