for all your suggestions! I think the tofu idea sounds great, I have cooked it like that before for the texture. The recipe captured my interest because of the butter and pine nut topping but yes they are expensive. My family has Doukhobour Russian heritage so the combination of yoghurt and butter alway draws me haha but this dish has interesting new textures and spices. I will look at the link you offered too. My sister and nephew are vegetarian as well and I think would enjoy this when we next get together. Thanks again, Happy New Year:)
