yea git only sees changes over whole lines of text, that's why git is terrible for everything that isn't code (there, the assumption that if the line has changed then the meaning is potentially completely different is actually reasonable, but it isn't for prose)

personally i am unfortunately not aware of a version control system that is actually competent for prose, it could exist though, and it's definitely possible if not
